How to Serve Wine at the Perfect Temperature — Red, White & Champagne

You've noticed it this summer even if you haven't named it. That good bottle of red you were looking forward to comes out of the rack, you pour it, and it's… flat. Soupy. A bit hot on the finish. You blame the wine. It usually isn't the wine — it's the temperature.

"Room temperature" is a myth from a colder century

The advice to serve red "at room temperature" was written when a room was about 16°C — draughty houses, no central heating, certainly no heatwave. A modern living room in a British summer sits at 24–28°C. At that temperature a red's alcohol dominates, the fruit goes flabby and the tannins turn harsh. But the fridge is the wrong fix too

  • Sparkling & champagne — 6–8°C
  • Light whites & rosé — 8–10°C
  • Fuller whites (oaked Chardonnay, white Rioja) — 10–13°C
  • Light reds (Beaujolais, Pinot Noir) — 12–14°C (yes — slightly chilled)
  • Medium & full reds (Rioja, Bordeaux, Shiraz) — 15–18°C

Look where the reds sit: 15–18°C. Cooler than a warm room, warmer than a fridge — right in the gap neither your kitchen nor your fridge can hold on a hot day. Call it the eight-degree gap.
